The key to our ciders is “balance.” We use less back sweetening than mass market ciders. Our guiding principle is that we use just enough sweetening to balance out the acidity and the tannins, to create the most enjoyable beverage possible and allow the flavor of the apples to be the star of the show.

YEAR ROUND CIDERS
THE ORIGINAL
6.8% ABV
Freedom’s Edge flagship blend. In a category full of acidic dry and cloying sweet, our goal here was balance: Tannic structure, bright acidity, beautiful aromatics. Achieved by blending tannic bittersweets with aromatic and acid forward dessert fruit, and back sweetening to the cusp of dry/off-dry.
Seasonal CIDERS
THE JUICE
6.8% ABV
Our interpretation of a modern American “Unfiltered” style. Local dessert fruit fermented clean and dry, then back-sweetened with our own cryo-concentrated cider. The age old process of concentrating sugar and acid via freezing and thawing of juice is commonly used in the production of ice ciders and ice wines. Fresh apple, honeycomb, and slight vegetal notes on the nose and finish.
Pied Pippin
5.8% ABV- Spring/Summer Seasonal
Made with whole fruit, just as the early summer tart from which it was inspired. Subtle but distinct rhubarb on the nose. Sweet strawberries balanced by the tart tang of rhubarb on the palate.
Cider Maker Series
Cherry Bomb
7.4% ABV
Attention fruited sour beer lovers. This is the funkiest libation in our current lineup and our first sour cider. Local apples and loads of black cherries cofermented with a strong floral ester producing yeast. Post fermentation, inoculated with lactobacillus and left in stainless steel for a year to sour. Fruity, floral, spicy, tart, funky.

Blueberry Daiquiri
6.0% ABV
A cocktail of cider and blueberries with a hint of vanilla.
Low Bush Tussle
7.2% ABV
A wild co-fermentation of local cultivars and Maine’s famed low bush blueberries. The berries impart their bright acidity, pale ruby hue, and elusive tones of real wild fruit all but lost in today’s artificial blueberry world.
MAC DABBY
7% ABV
The unlikely duo of a quintessential Maine dessert apple and a famed English bittersweet with a whisper of Albion’s own Swan’s wildflower honey. Vinous and ripe McIntosh pairs exquisitely with the floral and tannic Dabinett. Herbaceous hints of wildflower honey are also subtle but present
Sweet Mullet
6.5% ABV- Fall/Winter Seasonal
While this semi-sweet embodiment of Fall in a can was born from a typo (mulled/mullet), the similarities seem too uncanny for coincidence. Business in the front: local dessert fruit fermented crisp, clean, and dry. Party in the rear: steeped in mulling spices and back sweetened with ice cider. Fresh apples, dried orange, all-spice, cinnamon, and clove.
Cranberry Cosmo
6.0% ABV
A cocktail of cider, cranberries, dried orange peel, fresh lime juice, and cane sugar.

From Maple Sunday to Mid-June Strawberry picking, this cider captures Maine’s spring extremes. Maple syrup from Kinney’s in Knox and whole strawberries serve as subtle complements to the already present fruit and amber tones of this single varietal Dabinett cider.
Raspberry Lime Rickey
6.0% ABV
A cocktail of cider, whole raspberries, juniper berries, lavender, fresh lime juice, and cane sugar.
